Rustic Italian Bisque Recipe

Hi! For the first time I have created my own recipe from scratch. I wanted to share it with you guys!
This recipe is sort of a combination of minestrone and tomato bisque.

Rustic Italian Bisque

Ingredients:
1 1/2 cups of any type of pasta (I recommend rotini or elbows)
1 can of any type of beans (I prefer kidney or pinto beans)
2 tbsp of butter
1/2 cup of tomato sauce
1 can of whole tomatoes
1 can of petite diced tomatoes
2 cups of heavy cream
1/4 cup of balsamic vinegar
salt, pepper, oregano, basil, and crushed red pepper to taste













Instructions:
1. Cook pasta. Follow the instructions on the box.












2. Let beans boil in a separate pan. Cook for 1-2 minutes after boiling.

3. Melt about 2 tbsp of butter in the pot you will make the soup in. Careful not to burn it.

4. Blend the can of whole tomatoes a little bit, but not too much, you don't want tomato juice.
5. When the butter is melted add the tomato sauce, blended tomatoes, and petite diced tomatoes.
6. Stir in the heavy cream until it is well mixed.
8. Add the balsamic vinegar. I say 1/4 cup but don't fill the measuring cup all the way. Fill it about 3/4 of the way full. Stir it in.
9. Add salt, pepper, oregano, basil, and crushed red pepper until you are happy with the taste. Keep in mind after the soup simmers, it will taste stronger.
10. Add the noodles and beans when they are finished cooking.
11. Let the soup simmer for at least 5 minutes. I let my soup simmer while I cleaned up the mess I had made in my kitchen.
12. Serve. I like to serve it with toasted bread or garlic bread.


I hope you enjoy my first recipe. This makes a large pot of soup. It could probably serve 6-8. You can also half or double this recipe if you want, or make adjustments.
